My First Time Grilling
I’d say I am pretty new to living on my own and with that comes the everyday task of feeding myself. As a millennial I’ll admit I have an everyday Starbucks habit, I spend way too much money on avocado toast and I can’t get enough of my local cafe’s Acai bowls.

It didn’t take me long to realize that eating every meal out would require me to take a second job if I wanted to sustain that lifestyle. It was time I learned how to cook meals at home. First I would make a list of what I wanted for the week and then I would meal prep. This way I wouldn’t have to think about what to eat, I could just open the fridge and have it there ready for me saving not only time but also money.
Easy! But where to start? I found some great meal prep recipes online that I thought were easy enough to make. I decided to start with a lemon chicken & vegetable prep that was loaded with protein and healthy carbs. Now I just had to figure out how to cook the chicken.
I had never grilled anything in my life and the thought me starting a propane grill was nerve racking. Would I blow up? And more importantly, would the chicken taste good?

I followed the recipe to a T and loaded up the grill. I asked my neighbor to show me how to turn on the propane and light it because I noticed he was a grill aficionado.
Easier than I thought, the grill was heating up and I was ready to cook my first meal on my own. I threw on the chicken and the veggies, closed the top and put a timer on my phone.

In my recipe search I also found this super helpful meat temp chart that I’m convinced allowed me to escape food poisoning as well. My neighbor was kind enough to lend me his meat thermometer because I think he saw I really didn’t know what I was doing.
My timer rang and I checked my temps, decided I needed a few more minutes and shut the top. I felt like such an adult, grilling and meal prepping. It’s the little things people. Two minutes later and my chicken was perfect. My veggies were just the right amount of crispy and my first meal prep was complete.
Adulting 101: cook your own food and get yourself a meat thermometer! Bonus if you can turn your leftovers into a whole other meal like I did with this chicken salad recipe.
